While coming to the office in the morning, usually I listen to the Quranic recitation of either Sheikh Sudais or Sheikh Mishary Al Afasi. If you ask me who I prefer, it is the latter, but the Quran is beautiful to listen to in whosoever’s voice it is, especially when recited in the way it should be. 🙂 Some verses tend to hit your heart more, maybe because of the situation you may be in. Off late, the below verse has affected me a lot:

Let a man of wealth spend from his wealth, and he whose provision is restricted – let him spend from what Allah has given him. Allah does not charge a soul except [according to] what He has given it. Allah will bring about, after hardship, ease.” (Surah At-Talaq: 7)

Many times, I feel I am not doing enough. Alhamdulillah, I mentally empathize with many. I like to speak and I am very sensitive to people. It does get me into trouble a lot of times, but now I have learned to love that side of mine. Maybe because of it, a lot of people, who are not even known to me so well personally, open up their deep troubles to me. It has always put me off guard, making me wonder that I am myself struggling with so many things in life, and what makes them feel that I am good enough to confide their matters to me. For some, He has blessed them with every luxury but for many, He hasn’t. Sometimes I feel charity is a word restricted to money. In a religion that teaches us that even smiling is a charity, I feel that we need to spend from what we have. It implies not just money, but from all our resources, from our mental strength, from our aura, from the traits that He has blessed us with, InShaAllah…

For the upcoming month of Ramadan, I am looking at posting simple snack ideas that will make your Iftar time stress free. I am someone who doesn’t like to spend time in the kitchen for Iftar. Somehow I like to finish it fast and be back with reciting the Quran or watching some lectures. If you are like me, I hope you will find the upcoming recipes helpful. Meanwhile, please do not forget to go through the Ramadan series for more options!

I got this recipe from a group where some easy Ramadan recipes were served. You can understand why I loved this recipe. The main work is cooking the filling. You don’t need to do any extra shaping of the puff. Just keep it open, spread the filling and bake till done. So cool, right? These open puffs are great for any parties or if you have a small Iftar gathering. Instead of keeping one whole pastry, you can cut them into half and make them too. One only disadvantage I found that it didn’t taste that great while cold, so make sure that you leave them in a hot oven till the time of serving so that the puffs don’t turn soggy. Ingredients

  • 400 gm chicken mince
  • 1 tbsp oil
  • 1 onion minced
  • 1 tsp ginger garlic paste
  • 3 green chillies minced
  • 1 tbsp coriander seeds
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1/2 tsp garam masala
  • 2 eggs
  • 2 tbsp kasuri methi
  • 12 puff pastry squares
  • 1 small egg beaten

Instructions

  • Heat oil in a saucepan. Add the onion, green chillies and ginger garlic paste and saute till softened.

  • Add the mince and cook on medium flame till oil floats on the top.

  • Roast the coriander and cumin seeds and crush it in a mortar and pestle. Add this along with the turmeric powder and give a good mix.

  • Add in the eggs, garam masala and kasuri methi, add salt to taste and cook for a minute. Do not make it too dry, since we will be baking it. Switch off.

  • Preheat oven to 180 degrees. Line a sheet pan.

  • Keep one puff pastry sheet, press center slightly with a spoon. Add two tbsp of the filling. Brush the sides with the beaten egg.

  • Bake for 20-25 minutes till the pastry is crisp. Serve warm.

Notes

Keep the chicken under-cooked, since we will be baking it and it may tend to get dry.
You can sprinkle some cheese on top to make it more interesting.
